Paleo Summertime Fruit Soup
This refreshing paleo fruit soup is overflowing with sweet and juicy bites of summer fruit. While it’s easy to prepare, the waiting may be difficult. But don’t skip that part. It’s when the soup chills and the flavors meld together.

Ingredients
3 peeled and diced peaches
2 cups of rinsed and quartered strawberries
1 cup rinsed blueberries
1 cup rinsed blackberries
1/2 cup pomegranate juice (or orange juice)
2 tablespoons honey
1 teaspoon ground cinnamon
Juice from 1 fresh lime (2 tablespoons)
Coconut non-dairy yogurt for optional topping
fresh mint leaves for optional garnish
Instructions
1. Combine the peaches, strawberries, blueberries, and blackberries in a large bowl.
2. In a separate bowl, whisk the pomegranate juice, honey, cinnamon, and lime juice until well blended.
3. Pour this mixture over the fruit and gently toss with a large spoon to evenly coat.
4. Cover the bowl with plastic wrap and refrigerate for at least one hour before serving. The result will be a well-chilled soup with beautifully blended flavors.
5. Ladle into bowls and top with a dollop of non-dairy coconut yogurt and fresh leaves of mint.
