Paleo Steak Onion Soup

Do you love the flavor of steak and onions? Then this Instant Pot soup is for you! It features sweet onions sautéed to a golden brown and tender bites of steak in a delightfully seasoned beef stock.

Ingredients

3/4 teaspoon onion powder

3 teaspoons salt

1/2 teaspoon freshly ground black pepper

21/2 pounds chuck steak cut into 1-inch cubes

1/2 cup avocado oil or coconut oil, divided

4 large sweet onions, thinly sliced

6 cups beef stock

1/4 cup coconut aminos

1/2 teaspoon dried rosemary

3/4 teaspoon dried thyme

Instructions

1. In a small bowl, combine 3/4 teaspoon onion powder, 3 teaspoons salt, and 1/2 teaspoon freshly ground black pepper.

2. Add the cubes of steak and toss with your hands to coat evenly.

3. Press sauté button on Instant Pot. Add 2 tablespoons avocado oil or coconut oil to Instant Pot.

4. When oil shimmers, add 1/3 of the steak pieces. Leave undisturbed for 2-3 minutes before turning to brown other side. Remove and place seared steak in medium-large bowl.

5. Add additional oil and repeat for each third of remaining meat. Adding too much meat at once will result in gray beef, not the beautifully seared steak you want.

6. Cook the onions in a skillet while the beef is doing its thing in the Instant Pot.

7. Add 3-4 tablespoons avocado or coconut oil to a skillet and heat on medium-high heat. When oil shimmers, add the thinly sliced onions.

8. Stir the onions occasionally until they are very soft and golden brown – about 8-12 minutes. Transfer the cooked onions to a bowl.

9. Pour 1/2 cup beef stock into the warm skillet and stir to scrape loose the browned bits from the bottom. Pour this mixture in the Instant Pot along with the beef and onions.

10. Add the remaining beef stock, herbs, and coconut aminos to Instant Pot.

11. Cover with lid and close to lock. Close the steam valve.

12. Set to high pressure for 20 minutes. Allow natural pressure release. If any pressure remaining after 15 minutes, release it manually.

13. Season soup to taste with salt and black pepper. Ladle into bowls and enjoy!
